Split Pea Soup
Ingredients:
- 2 cups green split peas
- 1 ham bone
- 2 quarts cold water
- cayenne pepper
- 2 diced carrots
- 1 onion diced
- 1 diced celery stalk
Instructions:
- Soak peas overnight. Put ham bone in a large kettle, tightly closed, and simmer 1 1/2 hours in cold water. Do not boil. Add peas, carrot, onion, celery and seasonings and continue to simmer 1 more hour. Remove the ham bone. Rub soup through a sieve, return to the pot. Season with salt to taste.
- You may also add potatoes and green peppers.
