Foodie Friday: Irish Tea Cake

This recipe was requested by some of our visitors who have had Tea and A Tour recently so I thought I'd post it.  I found it on Let's Dish Recipes website which you can visit.

Ingredients

  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • Powdered sugar for dusting
  • Fresh berries and whipped cream, for topping (optional)
Instructions
  1. Preheat oven to 350 degrees. Grease and flour a 9-inch round pan.
  2. In a medium bowl, cream together the butter and sugar with an electric mixer until light and fluffy. Beat in the eggs, one at a time, mixing until fully incorporated. Stir in the vanilla.
  3. In a medium bowl, combine the flour, baking powder and salt. Stir into the batter alternately with the milk, starting and ending with the flour mixture.
  4. Spread the batter evenly into the prepared pan. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool in the pan on a wire rack for about 15 minutes, then turn out onto a serving plate.
  6. Just before serving, dust with powdered sugar. If desired, top slices with fresh berries and/or whipped cream.
